
Fiesta Meat Loaf Recipe
🌿 Florentine Beef Pinwheel Meatloaf
(A beautiful spiral meatloaf filled with spinach and cheese)
Ingredients
For the meat mixture
-
1 kg ground beef
-
1 cup breadcrumbs
-
2 eggs
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
½ cup milk
-
1 tbsp Worcestershire sauce
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp Italian seasoning (optional)
Florentine filling
-
2 cups fresh spinach, lightly sautéed and squeezed dry
-
1 cup ricotta or cottage cheese
-
½ cup shredded mozzarella or provolone
-
¼ cup grated Parmesan
-
Salt & pepper
-
Optional: 1 egg to help bind the filling
Instructions
-
Preheat oven to 180°C / 350°F. Line a baking sheet with parchment.

In a large bowl, mix the meat mixture ingredients until well combined.

Spread meat mixture onto parchment into a rectangle about 1–1.5 cm thick.

In another bowl, mix spinach, ricotta, mozzarella, Parmesan, salt & pepper.

Spread the filling evenly over the meat, leaving a 2–3 cm border at one end.

Use the parchment to help roll up tightly like a jelly roll.

Seal the edges and place seam-side down on the baking sheet.

Bake 60–75 minutes until fully cooked (internal temp 72°C / 160°F).

Rest 10 minutes before slicing to reveal the spiral.
Serving suggestion: Serve with tomato basil sauce or simple brown gravy.

(A Tex-Mex–style meatloaf—colorful, flavorful, perfect with rice or tortillas)
Ingredients

1 kg ground beef

1 cup crushed tortilla chips or breadcrumbs
-
1 cup shredded cheddar or pepper jack cheese
-
1 small onion, finely chopped
-
1 green bell pepper, diced
-
1 jalapeño, minced (optional)
-
1 egg
-
½ cup salsa
-
2 tbsp taco seasoning (or mix chili powder, cumin, paprika)
-
1 tsp salt
-
½ tsp black pepper
-
Optional: ½ cup corn kernels or black beans
Fiesta glaze
-
½ cup salsa
-
2 tbsp ketchup
-
1 tsp brown sugar (optional)
Instructions
-
Preheat oven to 180°C / 350°F.

In a large bowl combine beef, tortilla chips, cheese, vegetables, salsa, egg, and seasonings.

Mix gently until combined (don’t overwork).
-
Shape into a loaf and place in a baking dish.
-
Stir together the Fiesta glaze and spread over the top.

Bake 60–70 minutes or until cooked through.

Let rest 10 minutes before slicing.
Serving ideas: Cilantro rice, guacamole, sour cream, roasted corn.
- 1 1/2 pounds ground beef or pork or a mixture of both
- 3/4 cup dry plain bread crumbs
- 1 egg
- 1 cup tomato-based salsa, divided
- 1 (4.5-ounce) can chopped mild green chilies
- 2 tablespoons brown sugar, packed
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped fresh parsley
- 1 teaspoon unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon chili powder
- 1 teaspoon lemon juice
1. Preheat oven to 350*F (175*C). In large bowl, combine all ingredients, reserving 1/4 cup salsa; mix well.
2. In ungreased 1 1/2 or 2-quart casserole or 9 x 5-inch loaf pan, shape meat mixture into loaf.
3. Bake for 50 minutes. Remove from oven. Spoon remaining salsa over top of loaf. Return to oven; bake an additional 20 to 30 minutes or until thoroughly cooked in center and meat thermometer registers 160*F (70*C)...enjoy the meatloaf recipe ! Makes 6 servings.
