
Florentine Beef Pinwheel (Rolled Meatloaf)

🥩 Ingredients
For the Meatloaf

1 kg (2.2 lb) ground beef (85–90% lean works best)

1 cup fresh breadcrumbs
-
1 large egg
-
1 small onion, finely minced
-
2 cloves garlic, minced
-
½ cup milk
-
2 tbsp Worcestershire sauce
-
2 tbsp ketchup or tomato sauce
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp dried Italian seasoning (optional)
For the Spinach Filling
-
2 tbsp butter or olive oil
-
2 cloves garlic, minced
-
300 g fresh spinach (or 150 g frozen, thawed & squeezed dry)
-
½ tsp salt
-
¼ tsp pepper
-
1 cup shredded mozzarella or provolone
-
¼ cup grated Parmesan
🍳 Instructions
1. Make the spinach filling

Heat butter/oil in a pan.

Add garlic; sauté until fragrant.
-
Add spinach and cook until wilted (or warm thawed spinach).

Season with salt and pepper.
-
Let it cool, then mix with mozzarella/provolone and Parmesan.
2. Prepare the meat mixture
-
In a large bowl, combine:

beef, breadcrumbs, egg, onion, garlic, milk, Worcestershire, ketchup, salt, pepper, Italian seasoning

Mix just until combined—don’t overwork the meat.
3. Form the pinwheel

Lay a sheet of plastic wrap or parchment paper on a flat surface.

Spread the meat mixture into a rectangle about 1–1.5 cm thick (roughly 25×30 cm / 10×12 inches).

Spread the spinach-cheese filling evenly over the top, leaving a 1–2 cm border on the edges.

Using the plastic/parchment to help, roll the meat tightly from the long side—like a jelly roll.

Seal the edges and ends well.
4. Bake

Transfer to a greased baking dish, seam side down.

Brush top lightly with ketchup or tomato sauce (optional).

Bake at 180°C / 350°F for 60–70 minutes, until internal temperature reaches 160°F / 71°C.
5. Rest and slice

Let the meatloaf rest 10–15 minutes before slicing into pinwheel rounds.
