Florentine Beef Pinwheel (Rolled Meatloaf)

🍳 Instructions

1. Make the spinach filling

  1. Heat butter/oil in a pan.

  2. Add garlic; sauté until fragrant.

  3. Add spinach and cook until wilted (or warm thawed spinach).

  4. Season with salt and pepper.

  5. Let it cool, then mix with mozzarella/provolone and Parmesan.

2. Prepare the meat mixture

  1. In a large bowl, combine:

    • beef, breadcrumbs, egg, onion, garlic, milk, Worcestershire, ketchup, salt, pepper, Italian seasoning

  2. Mix just until combined—don’t overwork the meat.

3. Form the pinwheel

  1. Lay a sheet of plastic wrap or parchment paper on a flat surface.

  2. Spread the meat mixture into a rectangle about 1–1.5 cm thick (roughly 25×30 cm / 10×12 inches).

  3. Spread the spinach-cheese filling evenly over the top, leaving a 1–2 cm border on the edges.

  4. Using the plastic/parchment to help, roll the meat tightly from the long side—like a jelly roll.

  5. Seal the edges and ends well.

4. Bake

  1. Transfer to a greased baking dish, seam side down.

  2. Brush top lightly with ketchup or tomato sauce (optional).

  3. Bake at 180°C / 350°F for 60–70 minutes, until internal temperature reaches 160°F / 71°C.

5. Rest and slice

  • Let the meatloaf rest 10–15 minutes before slicing into pinwheel rounds.


🌟 Tips for Perfect Pinwheels

  • Dry spinach well so the loaf doesn’t get watery.

  • A slightly chilled meat mixture rolls more easily.

  • Add red bell peppers or sun-dried tomatoes to the filling for color.

  • Use a baking rack inside the pan if you want fat to drain off.

1. Preheat oven to 350°F (175°C).

2. Combine ground beef; bread crumbs, egg 1 teaspoon of the salt and the pepper; mixing lightly but thoroughly. Combine spinach, 1/2 cup of the mozzarella cheese, the Parmesan cheese, Italian seasoning, remaining 1/4 teaspoon and the garlic powder. Place beef mixture on waxed paper and pat into 14 x 10-inch rectangle. Spread spinach mixture over beef to 3/4-inch of edge on all sides. Roll up, jelly-roll fashion, starting at short end. Press beef mixture over spinach filling at both ends to seal. Place loaf, seam side down, on rack in open roasting pan.

3. Bake for 1 hour. Spread ketchup over loaf; continue baking 15 minutes. Sprinkle remaining 1/4 cup mozzarella cheese over loaf. Sprinkle with additional Italian seasoning, if desired.
