Instructions

  1. Preheat oven to 180°C / 350°F. Line a baking sheet with parchment.

  2. In a large bowl, mix the meat mixture ingredients until well combined.

  3. Spread meat mixture onto parchment into a rectangle about 1–1.5 cm thick.

  4. In another bowl, mix spinach, ricotta, mozzarella, Parmesan, salt & pepper.

  5. Spread the filling evenly over the meat, leaving a 2–3 cm border at one end.

  6. Use the parchment to help roll up tightly like a jelly roll.

  7. Seal the edges and place seam-side down on the baking sheet.

  8. Bake 60–75 minutes until fully cooked (internal temp 72°C / 160°F).

  9. Rest 10 minutes before slicing to reveal the spiral.

Serving suggestion: Serve with tomato basil sauce or simple brown gravy.
